To maximize the benefits of Shitake, we suggest using a double extraction. This involves first creating a decoction and extracting the water-soluble compounds (polysaccharides). After that, the mushrooms are tinctured in high proof alcohol for a minimum of 6 weeks to extract the ethanol-soluble compounds (which includes numerous

constituents). The extractions can also be performed in reverse, with the alcohol phase first and the water phase afterwards.
